Born in the south of France, Chef Nicolas brings Gallic sensibilities to his inventive cuisine while drawing on a gastronomic journey that has taken him around the world. At Raffles Hotel Le Royal’s signature fine-dining venue Restaurant Le Royal, Chef Nicolas will serve two exclusive dining options daily, including a sumptuous dinner set (priced at $92++) and a lunch set (priced at $42++), with optional wine pairings in addition to a special Louis XIII tasting. Dinner will be served between 6:30pm and 9:30pm, and lunch between 12pm and 3pm.

Highlights of his culinary repertoire include Rose de Champignons & Saint Jacques Sauce Tom Kah featuring fresh mushrooms in a delectable Thai-inspired sauce; Pigeon, Mais, Ail Noir, Passion & Sauce Cacahuetes made with pigeon, black garlic, passionfruit and peanut sauce; Pot Au Pho de Foie Gras, a dish inspired by the beloved Vietnamese noodle dish with foie gras; and Rouget, Safran & Aubergines, spotlighting fresh red mullet fish, saffron and eggplant.

Chef Nicolas’ upcoming meals are the latest in Raffles Hotel Le Royal’s exclusive culinary series. They follow an appearance in March by Chef Martin Simolka from the 5-star Le Scribe in Paris Opéra. Last year, French Chef Pascal Favre d’Anne, the recipient of 1 Michelin star, and Chef Patrice Hardy of Le Palme d’Or (2 Michelin stars) in Cannes and La Brettonnière (1 Michelin star) in Boulogne-Billancourt also served meals at the hotel. Chiang Mai Hotel’s Organic Farming Initiative Burgeons with New Partnership - TRAVELINDEX.comMeliá Chiang Mai has joined forces with a new sustainable and chemical-free farm to source the likes of rare, local greens, cage-free eggs and sterilised fresh milk, expanding its ‘360° Cuisine’ program.

In a bid to work closely with local farmers to help them improve sustainability and encourage ethical production to ultimately make the overall food system more resilient, the hotel has formed a partnership with organic gourmet farm Rong Khum in San Pa Tong.

The hotel sources organic Jasmine rice, cage-free eggs, fresh organic milk free of added hormones, vegetables such as betel leaves, coriander, spring onion, star gooseberry and chili, and fruits including longan, lychee, papaya, dragon fruit and bananas from Rong Khum for guests’ meals at Mai Restaurant & Bar, Laan Na Kitchen, MAI The Sky Bar and Ruen Kaew Lounge.

Chiang Mai University Professor Dr. Puangrat Kaewlom, who comes from a long line of farmers and is passionate about research into sustainable agriculture, established Rong Khum about two years ago. The farm joins the hotel’s network of ethical and chemical-free suppliers including gourmet farm SEED in San Sai District and Jartisann’s Original Thai Cheese, which crafts artisanal cheese made from high-quality, locally sourced raw cow’s milk.

The network is a central plank in Meliá Chiang Mai’s ‘360° Cuisine’ program, designed to reduce the hotel’s carbon footprint and promote healthy eating. Under the program, the hotel sources ‘farm to plate’ organic produce that travels only a short distance. As much of each ingredient is used – roots, leaves, stems, stalks and more – in a ‘thoughtful cooking process’ before ‘plate to farm’ food waste returns to the farms as fertilizer in a truly 360° concept. Leftover cooking oil is sent to be recycled into biodiesel.

Since the 360° Cuisine program’s inception in 2022, the hotel has sent more than 3300kg of leftover food for compost and fertilizer to both farms and more than 660kg of cooking oil to a biodiesel producer.

“It’s no easy feat to operate a chemical-free farm and it’s more expensive to support sustainable agriculture,” said Meliá Chiang Mai’s executive chef Suksant (Billy) Chutinthratip. “Yet we believe it’s crucial to engage directly with local farmers, producers, professors and health sector professionals to create a unique connection within the community that ultimately benefits the health of our guests, our community and our environment.”

Meliá Chiang Mai also ushers guests onto SEED and Rong Khum to meet local farmers and learn more about sustainable farming and healthier eating, as part of its Journey to the Farm Package.

The hotel was recently awarded the “Chiang Mai Green Kitchen” certificate for a second year and the new “Sustainable Healthy Food Program” certificate from Thai Health Promotion Foundation and Chiang Mai University in recognition of its efforts to go above and beyond to implement sustainable practices in its kitchens and contribute to healthy food practices in Chiang Mai. The Tourism Authority of Thailand has also certified the hotel with a “Five-Star Sustainable Tourism Acceleration Rating”.

Highlights of the feast at INNSiDE by Meliá Bangkok Sukhumvit’s all-day dining restaurant The Kites Eatery include grilled Ayutthaya river prawns, fresh seafood on ice such as oysters, rock lobsters, crabs, clams and mussels, and the steamed catch of the day.

Other buffet options include spicy salmon sashimi, grilled scallops, hot dishes such as crab curry and Thai beef noodles, colourful salads, roast vegetables, a selection of cold cuts and cheeses, and desserts such as playful cakes with customised ‘INNSiDE’ chocolate pieces. The seafood is accompanied by an array of condiments including the recommended chilli sauce.

Fashioned by executive chef Katisak ‘Note’ Pinkaew and his team, the Weekend Seafood Catch is served every Friday and Saturday from 6-10pm. It is priced at THB 999++ per person and THB 499++ per child aged six to 11 years inclusive of food and selected soft drinks.

Situated on the hotel’s 31st floor, The Kites Eatery is dominated by soaring windows giving way to spectacular views of Bangkok. It is adorned with abstract artwork of kites – a reference to the popular pastime of kite flying in state park Sanum Luang. Open from 6.30am-11pm, the restaurant serves up central, northern, north-eastern and southern Thai cuisine a la minute using quality ingredients sourced from local farms. The hotel’s chefs serve a healthy buffet breakfast and a la carte menu from noon, as well as customised lunches and banquets for meetings and events.

Beautiful Etosha-stone-walled outside showers have also been added, offering the perfect mix of privacy and a dash of daring.   Inside the tents, the suites all have new furniture and softs.  Each tent has a Nespresso coffee station and SMEG bar fridge and kettle for easy access to refreshments, including complimentary decanters of whiskey, cognac and gin.  The main guest areas have also enjoyed a refresh and are looking warm and inviting.

The Bespoke Temple Dinner offers a once-in-a-lifetime dining experience, uniquely set within the ancient temple complex of Angkor, a place of legend, myth and deep spirituality. The scene is set with blazing torches that cast flickering shadows around the ancient relics of the Khmer Empire. The specially designed meal is inspired by the hotel’s original 1936 menu first served in this historic setting, and the evening’s entertainment includes a performance of traditional Cambodian Apsara dance against a backdrop of the mystical temples.

Lost Civilisations of Angkor by Vespa features an off-the-beaten-track chauffeured ride on the back of a motorbike through the Angkor Archeological Park. The adventure explores areas not easily reached by foot, or too narrow or overgrown with forest to access by car, to appreciate the splendour of the centuries-old edifices. The journey begins at dawn to watch the sunrise at Angkor Wat, followed by a Raffles breakfast picnic at the edge of the temple complex. Highlights of the tour include Angkor Wat, Ta Prohm, Bayon, Angkor Thom and other lesser-known architecture marvels.

In Meet the Elephants of Angkor, guests travel to the idyllic foothills of Kulen National Park, home to a local sanctuary for the last remaining elephants of Angkor. This immersive, educational outing into the wilderness includes hands-on experiences with the majestic creatures. After the encounter, guests are served a picnic in the jungle curated by chefs at Raffles Grand Hotel d’Angkor. The cost of the experience is donated to the elephant sanctuary for the conservation and protection of the area’s community forest and endangered wildlife.

Khmer Culinary Discovery involves a nighttime tour of Siem Reap’s best-loved restaurants. For VND 450,000 per hour, guests experience virtual reality golf, choosing from about 125 golf courses simulating golf courses in a host of countries. Golf courses range from Vietnam’s Van Tri Golf Club and California’s Torrey Pines Golf Course to Thailand’s Alpine Golf Club and China’s JinMen Golf Course.

UN Tourism Reports Openness is Back to Pre-Pandemic Levels

Madrid, Spain, March 29, 2024 / TRAVELINDEX / UN Tourism has released its latest Tourism Visa Openness report on global visa policies, revealing continuous shifts in international travel regulations. The report sheds light on the evolving landscape of travel facilitation. It includes the Tourism Visa Openness Index that measures the degree to which destinations facilitate tourism and how open a country is in terms of visa facilitation for tourism purposes. Also, mobility scores are included to indicate to the extent to which citizens around the world are subject to visa policies, as well as an in-depth analysis of the reciprocity of visa policies.

Regional Openness Scores:

Return to Pre-pandemic openness: Destinations’ openness to international travel has rebounded to pre-pandemic levels following the lifting of COVID-19 related travel restrictions. As a consequence of the pandemic, new forms of travel facilitation, such as “nomadic visas”, also appeared.
Decline in traditional visa requirements: Fewer people worldwide now require a traditional visa to travel, falling from 77% in 2008 to 59% in 2018, and then to 47% in 2023.
Visa-exempt travel: 21% of the world population do not need any form of visa, an increase from 17% in 2008 and 20% in 2018.
Visa on arrival: 14% of the world population can apply for visa on arrival, an increase from 6% in 2008. and 15% in 2018.
eVisas: 18% of the world population can apply for eVisas, an increase from 3% in 2013 and 7% in 2018.

The report looks at visa regulations for tourism by region, highlighting:

Asia and the Pacific had the highest openness score of all world regions.
The most open sub-regions are South East Asia, East Africa and the Caribbean.
The greatest increase in openness since the last report in 2018 was observed in South Asia and West Africa.
The most restrictive regions remain Central and North Africa, North America and Northern and Western Europe.
Visa exemptions are particularly prevalent in the Caribbean and Central America.
Visa on arrival policies is common in East Africa, South Asia, South East Asia and West Africa.
Traditional visa requests in the Middle East decreased from 71% of the global population in 2015 to 57% in 2023.
eVisas are prevalent in West and East Africa and South Asia.

Recommendations for streamlined travel

The report underscores the pivotal role of visa policy improvements in fostering tourism growth. Key recommendations include increased integration of tourism perspectives into visa strategies, targeted visa-exemption programs for low-risk traveler markets and expanded visa on arrival facilities. In addition, clear communication on visa policies is vital, along with a streamlined visa application process, accelerated processing times and optimized entry procedures for an enhanced visitor experience.
